Water temp SIII FFR

Slowly rectifying some minor issues. I've got the OEM temp gauge working and there's 10v going through it but it still reads way too low (barely registers on the bottom edge of the white block). My thought is that the thermostat may be faulty. I've tested the water temp at the top of the radiator and it's around 155F or 68-69C on a meat thermometer. That puts it between cooked ham and medium roast beef  ::)

I'd expect about well done poultry at least (87C).   8) Any advice on the corrrect Temp would be appreciated. The cap is rated at 0.9 Bar (?12lb). Is this the correct cap?

I'm considering changing both the cap and thermostat.

My S3 workshop manual says 72 deg. which surprises me; I would have thought somewhere in the 80's,

I'd change the thermostat.
You've got a thermometer. Put the thermostat on the stove and boil it to see what temperature it opens at.
You may wish to add a little chicken stock for flavour.
